There’s a reason this vegetable is often referred to as the poor man’s vegetable — it’s just not very tasty. You can’t even blame it on the bitterness — celery is perfectly edible when fresh and unprocessed.
The problem is that as with most vegetables, once they have gone through a juicing machine, they lose a significant portion of their fiber content. The fiber found in celery helps keep your digestive tract running smoothly by acting as a natural broom and helping to sweep away harmful toxins from the body.
To help protect the fiber that’s found in celery, you can either juice it raw or add an enzyme called pectinase to help break down the cell walls a little bit. The more juicing you do, the less fiber it will contain. For example, juicing celery three times a week is enough to get rid of most of the fiber, but you’ll end up with about half the fiber of celery if you only juice it once a week.
